Stopping at farm stand on the long weekend to pick up some delicious corn on the cob, I yelled to the hubs to grab a zucchini. There had been a zucchini recipe I had my eye last year, but zucchini season came and went and I didn’t get a chance to try it. Hubs came back to the car with this bad boy! (err…the zucchini not the kid)
Yup, this was going to be a lot of zucchini! After making an 11×15 sized cake and a dozen muffins, I still had almost 3/4 of the zucchini to use up! The cake I mentioned above was actually from Mommy Kat and Kid’s, it was the recipe that inspired the need for the zucchini in the first place and it is delicious! We dove into it last night and it was a hit! The icing is soooo good!
