Adorable Sailboat Cupcakes that are perfect for summer celebrations!

My youngest boy turned 5 recently, it’s bittersweet really, my baby is growing up so fast! He’s my last one that still has that toddler boy run and skips when he holds my hand and plays in the sandbox for hours by himself while his big brothers hideout in the basement playing video games. sigh….somedays it would be nice to keep them young forever!

A couple weeks before his birthday my June issue of Today’s Parent arrived in our mail box. We were flipping through the section titled 30 Awesome Cupcakes and the Clear Sailing Cupcakes caught his eye. They looked easy enough so I gave them a try for his birthday! I made a few changes to ours and they turned out great! It’s clear skies ahead for these adorable cupcakes!

What You Need

Cupcakes 

Blue buttercream icing

Blue sugar (optional)

Lemon wedges

Lollipop sticks

Salt Water Taffy

Toothpick

Putting them together

Use any flavour of cupcake you like, I had chocolate cupcakes in my freezer leftover from my other son’s minecraft cupcakes the week earlier, but vanilla with a hint of blue food colouring would be awesome for the ‘water’ look too!

Using a large star tip, swirl on the blue buttercream icing to look like waves. Sprinkle with the blue sugar if you are using it right away so it sticks.

Roll out the salt water taffy with a rolling pin between two sheets of parchment paper. I found softening them in the microwave for just a couple seconds helped. Cut into a triangle shape with a pizza cutter and wrap the long end around a lollipop stick for the sail. I found it best to keep these in the fridge until you are ready to serve the cupcakes because the taffy will start to get soft and droop a little. It’s okay if it does, the sail will just look wavy, but if you want a nice straight one, keep them cool. 

Push the other lollipop end into a lemon wedge to finish the boat. Take a toothpick and stick it into the bottom of the boat and then into the cupcake to hold it on tight.
