Whole Wheat Pumpkin Spice Muffins

 


I’ve been baking a lot with pumpkin this fall, it kind of got out of hand.

It started with some pumpkin waffles and turned into an attempt to find the best pumpkin chocolate chip cookie recipe around and then with just one cup of pumpkin left over, I quickly whipped up a batch of some tasty whole wheat pumpkin muffins. 

They went a little like this

Whole Wheat Pumpkin Spice Muffins

Ingredients

  • 2 cups whole wheat flour
  • 1 1/4 cup brown sugar
  • 3/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger
  • 2 eggs
  • 1/2 cup canola oil
  • 1 cup pumpkin puree
  • 1/3 cup warm water

Instructions

Preheat oven to 375 degrees. Spray a muffin tin with nonstick cooking spray or insert paper liners and set aside.

Whisk together the flour, baking powder, baking soda, salt and spices in a large bowl. In a smaller bowl, whisk together the eggs, brown sugar, canola oil, pumpkin puree and water.

Add the wet ingredients to the dry ingredients and mix until just blended.

Fill the prepared muffin tins about 3/4 of the way full with the batter.

Bake for 20-25 minutes, until a toothpick inserted into the center comes out clean.

We gobbled these tasty pumpkin muffins up for breakfast, put them in school lunches and also for after school snacks!

My three boys are total muffin monsters and devour muffins like nobody’s business, you can tell I’ve been baking by the trail of muffin crumbs through the house. You wouldn’t think so, but muffins are one of the messiest foods for little ones, at least at our house it is!

Can You Freeze Whole Wheat Pumpkin Spice Muffins?

 

You sure can! These pumpkin muffins are easy to freeze and a great way to get ahead of the game for the busy school week. You can make a double batch of the recipe so you have some now and some for a couple of weeks down the road with hardly any extra effort on your part. 

 

How to Freeze Muffins

 

  • Cool muffins completely before wrapping and freezing.
  • To freeze, wrap securely in foil or place in freezer bags. Label all packages with the name of the recipe and the date. Baked products should be stored at 0°F or lower. Muffins can be stored frozen for up to 3 months.
  • When ready to use, pull muffins out of freezer and thaw completely at room temperature, or heat frozen muffins in the microwave to eat right away. 
  • To microwave, place unwrapped muffin on napkin, microwave-safe paper towel or plate. Microwave on HIGH about 30 seconds for each muffin.

  30. I love pumpkin in so many recipes for its unique versatile flavor. Muffins using whole wheat are now on my list , it should add a nutty taste to the pumpkin and spice and its much better obviously .

  34. Ok I am going to have to make these. I just realized I have a can of pumpkin in my cupboard. I got it for my dog when his belly was getting bad. Never got to give it to him. He was to sick and we had to put him down. I will be putting a hole in the center and putting some cream cheese icing in the center so it will seem more like a treat to them.
