FROZEN inspired Candy Cane Shortbread Cookies

I’m usually one of those early shoppers, I like to get everyone one my list done before the hustle and bustle hits, but I leave my boys until mid December because they are constantly changing their minds, and adding to their list with every television commercial they see. This year, I haven’t even started anyone on my list. Partly because we did some travelling in November that occupied my time and thoughts, but mostly because I just don’t know what to buy! So since I’m putting shopping off, I decided to get started early on my holiday baking, I can’t leave it all till the end right?

With the Disney hit FROZEN everywhere I look these days, I decided to make a fun movie twist to my regular shortbread cookies this year!

FROZEN Inspired Candy Cane Shortbread Cookies

Ingredients

1 cup Gay Lea butter

1/2 cup icing sugar

1/4 Peppermint Extract (optional)

2 cups all purpose flour

1/4 teaspoon salt

2 Blue Candy Canes, crushed

Cream butter and icing sugar together. If using the peppermint, add in now. Slowly add flour and salt mixing well. 

Roll out with rolling pin about 1/4 inch thick

Cut with a snowflake shaped cookie cutter. I knew I had one in a Christmas set, so I didn’t buy one. I wasn’t overly impressed with it though once I got cutting, it’s not as pretty as I would have liked. My youngest called it a star, so I will likely pick up a prettier design in the future. 

Place on  a parchment lined cookie sheet, and sprinkle with crushed candy canes. To crush, I put mine in a ziploc bag and smashed them with a rolling pin, it worked wonderfully!

Refrigerate for about 15 minutes

Bake at 350F for 8-10 min or until edges are light brown

  3. Cut with a snowflake shaped cookie cutter.
  4. Place on a parchment lined cookie sheet, and sprinkle with crushed candy canes.
  5. Refrigerate for about 15 minutes
  6. Bake at 350F for 8-10 min or until edges are light brown

  4. I was baking cookies from a tube this morning and was really wishing I was making homemade shortbread. I think I have found my inspiration to take my baking to the next level. but now I have to buy candy canes

    • any excuse to buy candy canes is a good excuse 😉

      • went to make these for my daughters girl guide meeting tonight. now I have the candy canes, check the recipe again and I don’t have the icing sugar. boxed brownies it is. i don’t know how you keep up with a blog and everything else. argh, i love shortbread and i will make these. i can do this.

    • the holidays are the perfect time! We took our boys to the theatre the day after an ice storm hit Ontario! It seemed fitting since our word was ice!

    This recipe looks really good. I’ve never seen a recipe for cookies with mint in it but I love it.

  21. I love this recipe and I am going to have to give it a whirl, they sound much better then my recipe, I imagine you could use the coloured sugar as well if you can not get the candy canes!!
