Skinny Twice Baked Potatoes

Like many of you, I vowed to get back on track this January after a month long indulgence of eating holiday sweets, eats and savoury treats. It was evident by both the scale and our jeans that the holidays had taken a toll on our waistlines, but my husband and I were ready to start the new year with a fresh start at eating healthy.

Eating healthy doesn’t have to mean giving up the things you love, it just means you need to watch your portion size and make smarter choices. There are great ways to modify all kinds of your favourite meals to make them better for you. If you love a good loaded potato, I think you’ll also love this slimmed down version of a twice baked potato too!

High in protein and low in fat, plus Nordica cottage cheese is also a great source of calcium! Pair these Skinny Twice Baked Potatoes with a fresh garden salad topped with cooked chicken for a healthy, satisfying meal.
