Lemon Cream Pie

 


A smooth and silky Lemon Cream Pie that makes a fresh dessert option! 

 

I’m kind of a die hard chocoholic in a bad way. I’ve been known to mutter things like “If it’s not chocolate, it’s not dessert” and other such snobby phrases about non chocolate dishes. But I’m changing my tune friends, and this cool and creamy pie is the reason!

This past Easter I was looking for a dessert, and knowing that the family would be noshing on chocolate all day long, I got to thinking of alternatives for Easter dinner dessert. My boys are citrus lovers and frequently drink water dosed with lemon and lime juice, so I had a sneaking suspicion that this Lemon Cream Pie was going to be a hit.

What I didn’t expect was how much I would fall in love with it myself, it’s AAHHHHMAZING!!!!!

 I loved how smooth and fresh this dessert was, perfect after a heavy meal or a hot summer’s evening on the deck. The graham crust is delish and be sure to use the leftover heavy to cream to make some homemade whip cream to top it all off! 

Lemon Cream Pie

Ingredients

1 cup heavy (whipping) cream, whipped to stiff peaks
1 can sweetened condensed milk
1/2 cup lemon juice, freshly squeezed or bottled

For crust
1 cup graham crumbs
1 tbsp sugar
5 tbsp butter, melted

Whipped Cream
1 cup whipping cream
2 tbsp sugar
vanilla to taste

Directions

In a medium bowl, add sugar to graham crumbs. Mix in melted butter until combined and press into a pie pan.

In a large bowl, whisk together the sweetened condensed milk and lemon juice until fully incorporated. Fold in the whipped cream you have already beaten to stiff peaks. Pour the filling into the graham crust evenly. 

Refrigerate at least 3 hours. 

For extra whip cream topping, beat together whipping cream, sugar and vanilla.

It’s a bit plain looking like this, but go ahead and dress it up with the whipped cream, seasonal treats like mini eggs, or my favourite – a big pop of red strawberries!

This pie is just so light and airy, creamy and tart, smooth as silk…..I could go on and on about it. It was love at first taste for me!

      I’ve actually never really been a fan of pie, I think it’s the pastry I don’t like, so the graham bottom pie was a winner for me!

  4. Sounds really good, a nice dessert for the summer. I am not a huge fan of pie crust so the graham cracker crust works for me 🙂

      Same with me Judy, I don’t like any traditional pie with pastry crust, but the graham crust is so good – like a cheesecake!
