This Spring, Make Canadian Turkey The Star Of Every Meal!

There is a hint of spring in the air, can you feel it yet? Our area is still covered in snow, but for Family Day Weekend we visited the grandparents and their grass was as green as a summer day and the sun had warmed the temps right up! It was a glorious weekend! Sadly, we returned back home to the white stuff, but it is slowly melting away and we know that spring isn’t far away. As the nicer weather starts to roll in, more opportunities to spend time with the family will come with it. Pretty soon we’ll be celebrating March Break and Easter and our favourite way to feed the whole family is Canadian turkey!

 

 

Turkey is the perfect option to turn to when organizing your crowd-pleasing meals. It’s easy to prepare and very versatile with a variety of cuts available at your local grocer or butcher.   A whole bird can easily feed a big group with minimal effort and planning, all for a very economical cost.  It pairs well with many flavors and spices, making it an easy substitute in any of your favorite meat recipes. Turkey is a light and lean source of protein that’s packed with vitamins and minerals, making it a healthy choice for your whole family.  

Whether it be Thanksgiving, Christmas or Easter, our go-to family meal is always a comforting turkey dinner. I love that I can prep a lot of the side dishes ahead of time so on the day of our gathering we can focus on star of the dinner, the turkey! And the best part? Leftovers of course! When we have guests staying with us for two or three days, it can be overwhelming to plan so many meals. By cooking a large turkey, I know that it will take care of more than just one meal so I can have time to enjoy the company we have and not spend hours in the kitchen. 

Check out this delicious looking recipe for Turkey, Apple and Kale Grain Salad with a Parsley and Pesto Dressing. It can be an eye catching side dish or even a nice lunch on it’s own. 

 

Turkey, Apple and Kale Grain Salad with Parsley Pesto Dressing

 

Turkey Apple and Kale Grain Salad with Parsley Pesto Dressing

Serves: 6 as a side or 2 as a main

Prep Time: 15 mins.

Cook Time: 20 mins.

 

Ingredients:

2 cups butternut squash, cubed

1 tbsp olive oil

Salt and pepper to taste

2 cups farro grains

1 cucumber, diced

2 apples, diced

1 small can navy beans

1 red pepper, diced

¾ cup slivered almonds

1 cup chopped kale

2 cups cooked turkey, cut into large chunks

 

Pesto Parsley Dressing:

2 tbsp pesto sauce

½ cup loosely packed parsley

1 tsp honey

Juice ½ lemon

¼ cup apple cider vinegar

1/3 cup olive oil

salt and pepper to taste

 

For salad:

  1. Cook the farro according to package instructions.
  2. Season the butternut squash with olive oil, salt and pepper. Bake for 15 minutes at 400 degrees or until fork tender.  Set aside to cool.
  3. Combine all remaining ingredients.
  4. Toss gently and season with salad dressing.

 

For Pesto Parsley dressing:

  1. Combine all the ingredients in a blender, hand blender or mini-chopper and blend.

 

TIP: You can use turkey breast or turkey thighs for this recipe.  If you don’t have cooked turkey on hand, chop fresh turkey into chunks, season with olive oil, salt and pepper, and cook in a frying pan until browned on all sides and cooked through, 8 – 12 minutes.

    So many good recipes! The first one I would make though is the Turkey Quesadillas. It would be easy to swap turkey for the chicken I usually use, my kids would actually eat it and I bet it would be delicious. I swapped ground turkey for my usually ground chicken and my kids preferred the ground turkey because it had more flavour. It’s easy to incorporate turkey into our regular recipe rotation.
