FROZEN inspired Candy Cane Shortbread Cookies

- 1 cup Gay Lea butter
- ½ cup icing sugar
- ¼ Peppermint Extract (optional)
- 2 cups all purpose flour
- ¼ teaspoon salt
- 2 Blue Candy Canes, crushed
- Cream butter and icing sugar together. If using the peppermint, add in now. Slowly add flour and salt mixing well.
- Roll out with a dusted rolling pin about ¼ inch think.
- Cut with a snowflake shaped cookie cutter.
- Place on a parchment lined cookie sheet, and sprinkle with crushed candy canes.
- Refrigerate for about 15 minutes
- Bake at 350F for 8-10 min or until edges are light brown
