Chicken and Chickpea Soup

Serves: 4-5
  • 1 medium onion, chopped
  • 1 tbsp garlic, minced
  • 1 tsp ground cumin
  • ¼ tsp ground cinnamon
  • 1 tbsp lemon juice (or juice of one lemon)
  • 2 medium carrots, peeled and thinly sliced
  • 3 stalks celery, sliced
  • 1 can chickpeas 540 ml
  • 1 can diced tomatoes 540 ml
  • 32oz chicken stock
  • 2 cups cooked chicken, shredded or diced
  • Salt and Pepper to taste
  1. In a large pot or dutch oven, add onion and cook, until soft. Add garlic, cumin, cinnamon and lemon juice, and continue to cook for about 1 min.
  2. Stir in carrots, celery, tomatoes, chickpeas and chicken. Pour stock in and bring to a boil.
  3. Reduce to a medium simmer and allow to cook for about 30 min.
  4. Season with salt and pepper if needed
