This healthy Turkey Meatloaf is loaded with garden veggies
Ingredients
1 lb ground turkey
1 small yellow onion, diced
1 large zucchini, shredded
1 large celery stalk, finely chopped
1 large carrot, shredded
1 bell pepper, finely chopped
1 tbsp minced garlic
½ cup old fashioned rolled oats
½ cup bread crumbs
½ cup unsweetened applesauce
¼ cup tomato sauce
1 tbsp worcestershire sauce
¼ cup fresh parsley, finely chopped
2 eggs
½ tsp paprika
1 tsp salt
1 tsp black pepper
Sauce
3 tbsp honey
1 cup tomato sauce
1 tsp worcestershire sauce
Instructions
Heat oven to 350 F.
In a large bowl, add all ingredients (except the sauce ingredients), and mix well until combined.
Press the meat mixture into a loaf pan.
Bake 1 hour
In small bowl, whisk sauce ingredients together. Remove meatloaf from oven, spread mixture over the loaf and return to the oven for an additional 10-15 minutes until thoroughly cooked.
Let stand 5 minutes before serving.
