As the weather starts to get chilly I always get excited about making yummy homemade soups! Homemade soup is comfort food at it’s finest for me! This Crock Pot Chicken Taco Soup is one of my all time favourite soup recipes because it’s so hearty with the chicken, beans and veggies and has a nice taco spice. I love that it is so easy to make right in the crock pot!
Crock Pot Chicken Taco Soup
Ingredients
1 onion, chopped
1 can kidney beans
1 can black beans
1 can corn, drained
1 can tomato sauce
1 can broth
2 cans diced tomatoes
1 pkg taco seasoning
3 skinless, boneless, chicken breasts
Directions
Put all ingredients in crock pot, lay chicken on top pressing down until covered.
Cook on low for 5 hours
Remove chicken and allow to cool long enough to handle. Shred chicken and stir back into soup
Cook for 2 hours
Optional – Top with some shredded cheese or crushed tortilla chips
