mmmm….. I love homemade soup, it’s good old comfort food on a cold winters night!
Here’s another one of our favourites
STUFFED PEPPER SOUP
1lb lean ground beef
1 1/2 green, red,or yellow peppers cut into matchstick thin strips
2 celery stalks, sliced
3/4 med sized onion, finely chopped
1 box (900ml) Ready to use beef broth
1 can Herb & Spice diced tomatoes, drained
1/2 cup uncooked white rice (or more if you want)
small can of tomato paste
1 tsp Worcestershire sauce
1 1/2 tsp minced garlic
1/2 tsp thyme
1/2 tsp black pepper ( I like a spicy pepper medley)
Tabasco sauce to taste (optional)
1. Cook beef in a large pot over med-high heat until browned. Drain any fat. Set beef aside. Reduce heat to med.
2. Add peppers, celery and onion to pot and cook for 5 min. Return beef to pot.
3. Stir in remaining ingredients. Heat to boil. Reduce heat to low.
4. Simmer, stirring occasionally for 20-30 min.
