I’ve been making more muffins lately, trying to keep the Hubster from buying those disgusting, expensive store bought muffins from the store! ewww! The boys just love them, but I feel better when I make my own muffins at home and know what goes in them. These Banana Raspberry Muffins are packed with fruit, made with whole wheat flour and the sugar is kept lower with the use of honey. The muffins are nice and moist and are especially delicious straight out of the oven! Warm muffins are our favourite and we will even pop them in the microwave for a couple of seconds to bring back that comforting fresh out of the oven feel days after baking.
Banana Raspberry Muffins
1 1/2 Cups Whole Wheat Flour
1 1/2 Cups All Purpose Flour
1 tsp Salt
4 tsp Baking Powder
2/3 Cup Olive Oil
2 Large Eggs
2/3 Cup Milk
3/4 Cup Honey
1/2 Cup White Sugar
1/2 – 3/4 Cup Raspberries (depends on how fruity you like it)
2 Ripe Bananas, mashed
Directions
Combine ingredients. Don’t over mix, stir only enough to wet all ingredients.
Grease muffin tin, pour to top of cups- this will make 12 oversized muffins
Bake at 400 for 20-25 min.

This sounds like a really great recipe……I have plenty of bananas in my freezer to make this too, but since I have Blueberries and blackberries on hand I think I will try using them. one or the other. We love muffins and the fruit just makes them even more tasty and special.. thanks for sharing!!

This certainly a very fruity muffin. I am wondering how olive oil would affect the taste. I cook with olive oil but do not bake with it. Does it affect the taste at all? I know it is a very healthy oil.
