It’s that time of year again! Holiday Baking Time!!! I’ve already got my list ready of squares and treats I want to make for this years holiday season, but that’s just one part of holiday baking! If you have over-night guests coming for the holidays this year, one of the easiest ways of serving up breakfast is with muffins. It’s always our go-to breakfast to have on hand because it’s quick, easy and everyone can eat when they are ready. While Carrot and Banana Muffins may be healthier options, I think it’s always fun to have at least one with chocolate chips for a special treat, they are always a hit with the kids!
I hate fussing with baking cups and the frugalista in me knows they aren’t necessary, especially when PAM does the trick every time! Did you know that PAM comes in a Baking version? PAM Baking combines the no-stick power of the Orginal PAM with real flour for baking! We always have the Original and the Grilling spray in the house but I will be picking up some PAM Baking before I begin my holiday baking this year!
Triple Chocolate Chip Muffins
- PAM® Baking Spray
- 3 cups (750 mL) all purpose flour
- ⅓ cup (75 mL) granulated sugar
- 2 tbsp (30 mL) baking powder
- 1 cup (250 mL) of butter
- 1¼ cups (300 mL) reduced fat (2%) milk
- ½ cup (125 mL) milk chocolate morsels
- ½ cup (125 mL) dark chocolate morsels
- ½ cup (125 mL) semisweet chocolate morsels
- Preheat oven to 400°F (200°C). Spray 12-cup (3 L) regular muffin pan with PAM® Baking Spray.
- Combine flour, sugar and baking powder in large mixing bowl. Cut in margarine with pastry cutter until mixture resembles coarse crumbs. Stir in milk until just moistened. Do not over mix. Fold in chocolate morsels.
- Spoon mixture evenly into prepared muffin cups. Mixture will be mounded and completely fill each cup. Bake 20 minutes or until golden brown. Remove from pan and transfer to wire rack to cool.
I made a slight variation from the recipe above, I used 1/2 cup of semi sweet chocolate chips and 1/2 a cup of white chocolate chips and they turned out really well. Like the recipe says, fill the muffin cups right to the top so they mound up. The dough won’t rise much, so as full as you make them will be the size of the muffin when it is done. I recommend serving warm with a cold glass of milk!
Here’s a Few Tips on using PAM for Holiday Baking
* Ever used a cookie cutter only to have the dough stick to it? When you spray your cookie cutters with PAM® Baking, you’re just left with perfectly shaped cookies every time!
* If your recipe calls for grated cheese, spray your grater with PAM® Baking so it slides across the grater with ease. And it will be easier clean up too.
* Chopped nuts add great flavour and crunch to cookies but if you’re chopping nuts in the food processor, be sure to spray it with PAM® Baking beforehand to make cleaning up a breeze.
* Save time, eliminate the mess and the two-step process of greasing and flouring by using PAM® Baking to spray your cookie sheets, cake and muffin pans. The flour is already in it!
The Skinny on PAM
Made with 100% canola oil, PAM helps you cut the fat but keep the flavour. Canola oil only contains7% saturated fat and is packed with omega fatty acids that are essential for good nutrition. Switch out butter for PAM when making holiday pancakes this year and save yourself 7 grams of fat!
Make sure you have PAM on hand when you kick off your holiday baking!

Cooking Spray is so important to keeping nice looking baked goods. Lets face it my muffin just tastes better when it’s whole than in crumbles!
My favorite holiday treat to bake is shortbread. I recently found a good but simple recipe. I don’t know what people did before Pam spray for baking.

I LOVE Pam!!! I tried some no-name stuff awhile ago (don’t know why!) and it was horrible. Then I tried PAM and WOW, sooo much better! Those muffins look yummy 🙂 Thanks for sharing the recipe!
I’ll be honest PAM kinda scares me….Can you ask them if they can make a NON GMO Canola spray?
Cooking sprays are so handy to have, I wish they would venture into an organic cooking oil or at least organic Canola oil which I doubt even exists. I hope this feedback will find it’s way back to PAM 🙂 I mean in it sincerely.

I love Pam Baking spray. I feel like the taste is much better for baking. I never thought about putting it on my cheese grater or cookie cutters. Those are great ideas that I can’t wait to try.
This looks absolutely delicious! I LOVE the triple chocolate in there! I’m the same way; those silly papers always seem so essential…until I remember that PAM is even better because I don’t have to peel off the paper before I eat it!
