Here in Canada the tomato harvest is season is really short, and while I love a great farm stand tomato in the summer, it doesn’t mean we are out of luck the rest of the year.

I use Hunt’s canned tomatoes, paste and sauces all year round; in Italian dishes like lasagna and spaghetti, in hearty soups and stews and even in quick and easy week night dinners like Sloppy Joes! Hunt’s is a staple in our kitchen and we keep it well stocked in our pantry. 

My recipe for Stuffed Pepper Soup is a family favourite on a cold winter’s night and uses fine Hunt’s Tomato Paste, as well as, Hunt’s Green Pepper, Celery and Onion blend of Chunky Tomatoes, which provides  3, one half cups of vegetables & fruit according to Canada’s Food Guide all on it’s own!

Stuffed Pepper Soup
Recipe type: Soups and Stews
Ingredients
  • 1 lb lean ground beef
  • 1½ green, red or yellow peppers, cut into thin strips
  • 2 stalks celery, diced
  • 1 small onion, finely chopped
  • 1 box (900ml) beef broth
  • 1 can Hunt’s Green Pepper, Celery and Onion chunky tomatoes
  • ¾ cup white rice
  • 1 small can (156ml) Hunt’s tomato paste
  • 1 Tbs Worcestershire sauce
  • 2 tsp minced garlic
  • ½ tsp dried thyme
  • ½ black pepper
  • optional: tobasco sauce to taste
Instructions
  1. Cook beef in a heavy bottom pot over med-high heat until browned. Remove beef, pour off fat and set aside
  2. Reduce heat to med. and add peppers, celery and onion and cook for about 5 min. Return beef to pot.
  3. Stir in remaining ingredients. Heat to boil. Reduce heat to low and let simmer, stirring occasionally, for 20-30 min.

* Want to thicken up your sauce from the canned tomatoes you’re using? Add in a tablespoon of tomato paste, such as Hunt’s Original Tomato Paste.

* ALWAYS finish cooking your pasta in your tomato sauce (the only exception: a cold pasta salad). Just before reaching the al dente stage of cooking, strain your pasta and add it to the sauce. Continue cooking the noodle for a minute or so until the pasta is al dente. This will release the pasta starches and thicken up the sauce, which gives that beautiful glisten of sauce on noodle.

* Tomato paste is a great way to add that extra tomato flavour to heartier, meat-based stews and chili.

* To most Italians, there are certain types of sauces you pair with certain noodles. I generally prepare tomato sauce with penne rigate – the ridges in the penne trap the sauce in the noodle if prepared correctly.

* Don’t feel guilty for using cans of tomatoes – the tomato season is short in Canada, and the ones in the can, like Hunt’s Original Diced, are picked at their peak so they’re ripe and flavourful!
