Grab your sombrero and fire up the Mariachi music, it’s almost time for Taco Tuesday! The boys love having Mexican on Tuesday nights, thanks to The LEGO Movie, and Mom and Dad are happy to dig into our favourite gourmet tacos, taquitos and quesadillas any day of the week!
One of our favourite quick and healthy lunches is quesadillas, made with a chick pea spread and cheese of course! I just blend a can of chick peas with a spoonful of sour cream and a spoonful of Old El Paso mild Salsa until it’s creamy. A small hand blender works great. Simply spread the mixture onto one soft tortilla,like the ones found in the Hard & Soft Taco Dinner Kit above, and sprinkle with cheese. Top with another soft tortilla, pressing down gently. Bake in the oven at 350 degrees until the tortilla starts to get crispy and the cheese melts. It doesn’t take long and it tastes amazing, you can even include cooked chicken in there as well if you like! Serve with more sour cream and salsa on the side.
