Garlic Parmesan Hummus Recipe

 


 

Summer is all about barbecues on the deck, picnics and lazy days at the cottage, but you can’t have any of these without some amazing food to go with it! Burgers will always be a summertime favourite but side dishes, apps and snacks are just as important to complete the meal. I often find that the family gets hungry a lot faster when we are out in the heat and cool snacks that aren’t full of sugar are great ways to beat the heat!

One of our favourites is hummus, it’s so versatile! Great as a snack with some fresh veggies, crackers or warm pita bread but we also use this as a spread for quesadillas and pita sandwiches as well!

The best part is we always have the ingredients on hand and it takes just a few minutes to whip it all together! A plain hummus is delicious on it’s own, but for variety we like to dress it up with other favourite flavours like this Garlic Parmesan Hummus!

 

Garlic Parmesan Hummus

 

Garlic Parmesan Hummus

 

1 can chickpeas, drained and rinsed (try to remove as much skin as possible for a smooth dip)
1/2 cup Gay Lea Low Fat Sour Cream
2 tbsp Tahini
2 tbsp freshly squeezed lemon juice
2 tsp minced garlic
1 tsp liquid honey
2 tbsp grated parmesan cheese
1/2 tsp sesame oil
1/4 tsp ground coriander
1/8 tsp ground cumin

Place all ingredients in a blender or food processor and blend until smooth and creamy. You can also use a hand blender or magic bullet if you choose. Store in the fridge.

Serve with fresh veggies (peppers, cucumber, celery, carrots etc), crackers or warm pita wedges.

To make pita wedges, brush each pita bread with olive oil, sprinkle garlic powder, seasoning salt and italian seasoning and bake in the oven until slightly crispy but still soft and chewy on the inside. Just a few minutes will do. Go ahead and experiment with your favourite seasonings.

Gay Lea Sour Cream also comes in Gold Premium, No Fat, and Lactose Free. Any of them should work well in this recipe, I like the low fat version myself.

Ingredients

    My daughter has her friends over on Friday nights for movie night. We make a dip with sour cream these kids love it I think they drink it. Thy are 13. I put out a dinner plate over flowing with veggies a couple bags of chips and some baked goods. They devour it all between 3-4 girls. My daughter is as fat as a Barbie doll. Lol.
