This Taco Salad recipe makes a nice big salad for a crowd and perfect to bring along to pot lucks and picnics.
Summer is here and the perfect side dish to any meal is Salad of course!! This Taco Salad is one that was passed down to me from my mother in law because it’s my husbands all time favourite. It really is a very manly salad with all of that ground beef and beans lol In fact my husband used to eat this salad as a complete meal when he was in collage.
TACO SALAD RECIPE
Ingredients
1 lb ground beef
1 can red kidney beans
Half a head of lettuce, shredded
1 large tomato
2-3 cups grated cheese
2 pkg Doritos Nacho Cheese Chips, crushed
1/2 bottle (or to taste) Catalina Salad Dressing
Directions
Brown meat in frying pan, drain grease and add in beans to heat through. Place a paper towel on a plate and spoon mixture on top to cool. The paper towel will soak up the extra grease.
In a large bowl, add lettuce, tomatoes, and shredded cheese. Toss in meat mixture.
Just before serving add in crushed chips and salad dressing and toss.

Can taco salad be made in advance?
Yes, you can make taco salad in advance but you’ll need to wait until just before serving to do the final assembly so the chips won’t be soggy. Simply store the cooked beef, torn lettuce, shredded cheese and salad dressing in the fridge. When ready to assemble, toss the items together with the broken tortilla chips.
