During the school year, breakfast stays pretty simple around here. The boys are actually encouraged to make their own breakfast, but even when I help out the morning feast is usually cereal or peanut butter toast. Now that the summer holidays are here the morning routine has slowed down considerably and I’m able to surprise my guys with favourites like pancakes and waffles that used to be reserved for weekends only.
Summertime often means a few more treats get snuck in during the week like afternoon ice cream cones on the deck, so I try to make sure their day starts out right. These Chocolate Banana Pancakes flavoured with Nestlé Nesquik are actually pretty healthy, but the boys don’t even notice! They see chocolate, but the pancakes are full of good things like bananas, whole wheat flour and oats. Sneaky sneaky!
Chocolate Banana Pancakes
Ingredients
4 eggs
2 ripe bananas
1/2 cup rolled oats
1/4 cup Nestlé Nesquik Chocolate Powder
1/4 cup whole wheat flour
Strawberries (optional)
Powdered Sugar (optional)
Directions
Combine eggs, bananas, oats and Nesquik powder in a blender and pulse for a few seconds until smooth. Add in flour and pulse a few more times or just stir until combined.
Pour batter by 1/4 cup onto a hot skillet. Cook first side until bubbles form on the top of the pancake, then flip carefully and cook the other side for approximately one minute.
Sprinkle with powdered sugar and serve with fresh strawberries if desired.
Note: If you don’t want to use the blender you can use a fork to whisk the eggs and mash the bananas. The batter will be thicker as the oats will be chunkier this way.

This does sound good and I would make this only I don’t have any wheat flour. Also was just wondering…..do you use syrup over the pancakes? or just eat dry? Maybe make strawberry syrup, that might hit the spot too..
