Cranberry Pumpkin Seed Bark

 


An easy Cranberry Pumpkin Seed Bark that looks as good as it tastes! 

 

When it comes to holiday baking, we definitely have our list of favourites and a simple, classic Almond Bark is a must-have each year for my husband. It’s so easy to make and looks very pretty, but after years and years of making the same bark, I decided it was time to mix things up a bit!

Inspired by some salty pumpkin seeds we picked up for our salads, I decided to make a festive Cranberry Pumpkin Seed Bark and it quickly became my new favourite!

Ingredients

1 Package (8 Squares) Bakers Semi Sweet Chocolate

1 Package (8 Squares) Bakers White Chocolate

1/2 Cup Dried Cranberries chopped

1/4 Cup Pumpkin Seeds

Directions

Chop each square of chocolate into approximately 8 pieces

Place chopped semi sweet and chopped white chocolate into two separate bowls.

Microwave each bowl at 30 sec intervals, stirring in between until almost melted. Essentially you want to see one-third of the chocolate still unmelted, then stir chocolate until completely melted and smooth. Chocolate can burn quickly, it’s better to go slow. You can also use a double broiler method, but I find this way easier. 

 

 

Drop spoonfuls of chocolate, alternating white and semisweet onto a waxed paper or parchment lined baking sheet.

 

 

Using the end of a knife, draw the semi sweet chocolate and white chocolate together to create a marbled pattern.

 

 

Sprinkle cranberries and pumpkin seeds evenly over the top of the melted chocolate.

Refrigerate until firm
Lift from paper and break into pieces

The best part is it takes just minutes to make so you can move on to making other treats while the chocolate is setting.

    This looks absolutely delicious and so beautiful! not like your typical plain bark (which is what i usually make..you know vanilla and candy cane lol) I am totally trying this out for my girls Christmas party

      I usually do an almond bark but you can never see the almonds and it looks pretty plain. I love how you can see all the add ins, right on top this way

    I would definitely use this recipe as a gift option. So festive with the cranberries. Pumpkins seeds too. Use dark chocolate and call it healthy 🙂

    I love ‘bark’ at Christmas. The combination of cranberry will compliment the sweet chocolate. I think I would add walnuts instead of seeds. Thank you so much for your sharing.
