Strawberry Peach Cobbler

The warmer weather is finally here and this weekend we couldn’t resist firing up the barbecue to grill up some chicken breasts and homemade burgers! It was a perfect reminder that summer is right around the corner and to compliment our dinner I made an amazing, yet very easy, cobbler with our favourite fruits of the summer season – strawberries and peaches!

We have fond memories of going strawberry picking with the boys each summer, and I can’t wait to make this delectable dish again once the fruit is in season! For now though, I used canned peaches and strawberries from the grocery store and it was so good, especially served warm with a side of vanilla ice cream! To.Die.For!

You’ll probably notice right away that this recipe doesn’t have any extras for spice and flavour. The secret is right here in the Gay Lea Cinnamon & Brown Sugar Spreadables. It all you need, promise! It’s the perfect blend of brown sugar and cinnamon and brings the whole dish together, complimenting the fruit perfectly! 

STRAWBERRY PEACH COBBLER

Ingredients

1/2 cup Gay Lea’s Cinnamon & Brown Sugar Spreadables
1 egg
1 cup milk
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 cup sugar
2 tsp baking powder
1/2 tsp salt
1 cup strawberries, sliced
1 cup peaches sliced

Directions

Preheat oven to 350 degrees. 

Melt Gay Lea’s Cinnamon & Brown Sugar Spreadables butter and pour into a baking dish (9×13 will work well).

In a medium bowl, mix together egg, milk, flours, sugar, baking powder and salt. If you don’t have whole wheat flour, use 1 full cup of the all-purpose instead. Pour directly over the butter, but don’t mix together.

Add fruit in a single layer, covering the top.

Place in preheated oven and bake for 45 minutes, or until top is golden brown. The cake will bake up and around the fruit, with some showing through making a pretty presentation all on it’s own.

    I love cobbler but I’ve only had peach cobbler. So the combination of peach and strawberry has my mouth watering because I love both of them together or apart. Sounds yummy !

  191. While I can fully appreciate the need for a specialty item like Gay Lea’s spreadables, I cannot get it in my area of Florida (Daytona Beach). Is there any substitution of butter, brown sugar, cinnamon that I can use? Thanks, as it looks scrumptuous

      I would try using half brown and half white sugar instead of the 1 cup of white and then just adding in some cinnamon to taste. Good luck!
