My husband loves chocolate cake. Nothing special mind you, anything from a box will do as long as it has chocolate icing – insert me yawning right here. Far too boring for me. So when my husband had a craving and held that little box in his hand, was I ever relieved that he took the time to check out the recipe on the side and agreed to try making the cookies with the cake mix.
Chocolate Cake Mix Cookies
1 package Duncan Hines chocolate fudge cake mix
2 eggs
1/2 cup butter or margarine, melted
1/4 cup brown sugar
1 tsp. vanilla extract
1 cup semi-sweet chocolate chips
1/2 cup chopped pecans or walnuts
1. Preheat oven to 350F. Grease baking sheets.
2. Place cake mix, eggs, melted butter, brown sugar and vanilla in large bowl. Stir with spoon until thoroughly blended. Stir in chocolate chips and nuts. Drop by level measuring tablespoonfuls onto greased baking sheets.
3. Bake at 350F for 12 minutes for chewy cookies (cookies will still be puffed) or 14 minutes for crisp cookies. Cool 2 minutes on baking sheets. Remove to cooling racks. Cool completely. Store in airtight container.
Of course, they were best the first day straight out of the oven. No surprise there. They were a little flat and seemed to get dry and crunchy quickly. I love homemade cookies because they are usually soft and chewy; these weren’t like that, even following the appropriate baking times. But hey, I’ve already disclosed I’m a cookie snob in other posts. Hubby and the cookie monsters had no complaints.
