These Banana Oatmeal Chocolate Chip Muffins are perfect for adding to school lunches, breakfast or afternoon snacks!

 

My boys are total muffin monsters and absolutely love them! I don’t think they’ve ever met a muffin they didn’t like so we tend to make a lot of different varieties. 

These banana muffins are a great way to use up bananas that are starting to turn.

Did you know that you can freeze a banana as well? That’s another great way to save a banana going black. Then just thaw the banana when you are ready to bake with it!

Banana Oatmeal Chocolate Chip Muffins

Easy muffins the kids will love in school lunches, for breakfast or snacks

Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup quick oats
  • 1/4 cup flax
  • 1/2 cup white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3 large ripe mashed bananas
  • 1 cup chocolate chips

Instructions

  1. Combine flour, oats, flax, sugar, baking powder, baking soda, and salt.
  2. In large bowl, beat the egg. Stir in milk, oil and vanilla. Add the mashed bananas and combine thoroughly.
  3. Stir the flour mixture into the banana mixture until just combined. Fold in chocolate chips.
  4. Line a 12 cup muffin tin with paper baking cups or spray with baking spray. Divide the batter evenly among them.
  5. Bake at 400 degrees F for 18-20 minutes.

Can You Freeze These Banana Muffins?

 

You sure can! These Banana Oatmeal Chocolate Chip muffins are easy to freeze and a great way to get ahead of the game for the busy school week. You can make a double batch of the recipe so you have some now and some for a couple of weeks down the road without any extra effort on your part. 

 

How to Freeze Muffins

 

  • Cool muffins completely before wrapping and freezing.
  • To freeze, wrap securely in foil or place in freezer bags. Label all packages with the name of the recipe and the date. Baked products should be stored at 0°F or lower. Muffins can be stored frozen for up to 3 months.
  • When ready to use, pull muffins out of freezer and thaw completely at room temperature, or heat frozen muffins in the microwave to eat right away. 
  • To microwave, place unwrapped muffin on napkin, microwave-safe paper towel or plate. Microwave on HIGH about 30 seconds for each muffin.

  21. Made some adjustment to this, turned out quite amazing. Substituted the oil for butter, skipped the flax seed and baking soda, also added tblspn of cinnamon powder and baked them as 6 jumbo miffins instead of 12. Was so moist and tasty. Baked at 190 degrees for 25 minutes.
