Skinny Twice Baked Potatoes

 


Like many of you, I vowed to get back on track this January after a month long indulgence of eating holiday sweets, eats and savoury treats. It was evident by both the scale and our jeans that the holidays had taken a toll on our waistlines, but my husband and I were ready to start the new year with a fresh start at eating healthy.

Eating healthy doesn’t have to mean giving up the things you love, it just means you need to watch your portion size and make smarter choices. There are great ways to modify all kinds of your favourite meals to make them better for you. If you love a good loaded potato, I think you’ll also love this slimmed down version of a twice baked potato too!

Gay Lea’s Nordica Cottage Cheese is the secret ingredient to these creamy and delicious potatoes. High in protein and low in fat, plus Nordica cottage cheese is also a great source of calcium! Pair these Skinny Twice Baked Potatoes with a fresh garden salad topped with cooked chicken for a healthy, satisfying meal.

Skinny Twice Baked Potatoes

Ingredients

2 large potatoes
1 tablespoon olive oil
1 cup Gay Lea Nordica Fat Free Cottage Cheese
1 egg yolk
2 tablespoons chopped fresh dill
1/4 teaspoon freshly ground pepper
1 tablespoon grated parmesan cheese

Directions

 1.  Wash potato and pierce several times with fork and cook on full power in the microwave for 8 minutes. Turn over, and continue to cook for 8 more minutes until soft. If you have a potato button on you microwave, this should work fine too.
2.  Turn on oven and set to Broil.
3.  Cut potatoes in half lengthwise and scoop out potato and set aside.  Leave about 1/8 inch of potato so you do not damage the skin.
4.  Brush the potato skins with olive oil on both sides.  Place on cookie sheet and broil in oven for 5 minutes or until golden brown.

5.  While the skins are in the oven, puree cottage cheese and egg yolk with a hand blender. Add potato flesh, dill, pepper and cheese. Pulse until just blended.
7.  Scoop potato mixture into the browned potato skins.   Broil in oven to heat through, approximately 5 minutes.

  12. I have made many many times twice baked, and skins but have never ever thought of using cottage cheese and it is one of my faves, I love eating it right out of the container, so yes I am going to have to make these up, I just cannot tell the hubby what is in them..lol, thanks for sharing!!

        Well I made them, the only thing I did different was brown the skins in my deep fryer, other than that followed the recipe to a tee and they turned out awesome, I love the dill in them too, and hubby never said a word, which is a good sign!! thanks for a great recipe!!
