Thai Red Curry Chicken with Rice Noodles. An easy Thai recipe you can make at home!

Last night, my husband and I made the most deliciously spicy Thai Red Curry Chicken that was anything but dull and was better than take out! gasp! I meant it too, sooooo good! Give it a try!
Thai Red Curry Chicken with Rice Noodles
Ingredients
- 2 tbsp sunflower oil
- 2 chicken breasts, diced
- 2 celery stalks, diced
- 1 red onion, cut into thin wedges
- 1 red or green pepper, cut into strips
- 1/4 jar Blue Dragon Thai Red Curry Paste
- 1 can Blue Dragon Coconut Milk
- 1 tbsp sugar (try coconut sugar!)
- 1 tbsp Blue Dragon Fish Sauce
- 4 portions rice noodles, cooked per directions on package
- 1 squeeze of lemon
- 2 green onions, chopped
Instructions
- Heat the oil in the wok or frying pan and cook chicken through. Remove chicken from pan.
- Add the celery, red onions, and pepper. Stir fry for 3 minutes.
- Add a couple of tablespoons of water. Continue to cook the vegetables until tender but retain bite.
- Push the vegetables up the sides of the wok. Add another couple of tablespoons of water to the centre and mix in the curry paste and fry until it has mixed with the juices at the bottom of the pan and reduced to a syrupy consistency.
- Add the coconut milk, sugar and fish sauce and mix in the vegetables.
- Add the noodles and chicken. Toss together until sauce is warmed through. Serve with a squeeze of lemon and garnish with green onion

Will have to try this sometime when the family is over, hubby does not like curry, noodles or rice so I don’t get to eat curry very often!

He doesn’t eat chicken or pasta either which makes it so hard, of course I love them all so whenever we go out I have chicken with either pasta or rice
