Chocolate Mousse for Two

A silky, smooth Chocolate Mousse recipe for two! Perfect for Valentine’s Day dessert! 

 

Valentine’s Day is right around the corner and love is in the air! Well, there’s a lot of things in the air in this boy run house, but there’s love, there is definitely love!! I’m excited that Valentine’s Day falls on a weekend this year, and a long weekend to boot! I’m looking forward to early morning snuggles with the boys and a little wine and chocolate with the hubs!

Chocolate and Valentine’s Day go hand in hand, and I’ve made this amazing chocolate mousse recipe in past years on Valentine’s Day. I was definitely excited to make it again to share with you before the big day this year! We’ll eat it any day of the year!

Chocolate Mousse for Two

 

Ingredients

1/4 cup semisweet chocolate chips
1 Tbs water
1 egg yolk, lightly beaten
1 1/2 tsp vanilla extract
1/2 cup whipping cream
1 Tbs sugar
Gay Lea Whipped Cream

Directions

In a small heavy pot, melt chocolate chips with water over low heat; stir until smooth. Take a spoonful of the chocolate mixture and stir into the beaten egg. Return the chocolate egg mixture to the pot and stir to blend. Cook and stir constantly for about 2 minutes, or until slightly thickened. Remove from heat and stir in vanilla. Cool, stirring often.

In a mixing bowl, beat whipping cream until it begins to thicken. Add in sugar; beat until soft peaks form. Fold cooled chocolate mixture and mix until blended. Cover and refrigerate for at least 2 hours.

Of course it tastes great like this, but you are definitely going to want to pull out all the stops and top it with Gay Lea Whipped Cream and any sprinkles to suite the occasion, I chose a sparkly red for Valentine’s Day.

This recipe makes two perfect portions, if you are planning on having the kiddos join you for this amazing dessert, and hey, why not!, go ahead and double the recipe up. The dessert dishes I wanted to use are kind of large, so I made a double batch and all of it is used in the photos you see here. It’s a lot though for one, I only ate half of what is in that cup (one serving) and saved the rest for later.

    A nice and easy dessert, though I’ll swap the semi-sweet for milk or white chocolate chips, and I’m not sorry to say that I’d have to eat both all on my own 🙂

    My mum used to make something that looked similar, it was some sort of pudding that she mixed with whipped cream and decorated with whipped cream on top. If I was lucky there was a glace cherry on top 🙂
