Coconut Rice Pudding #loveyourcoconut

As I was boiling a pot of coconut milk and cinnamon on the stove yesterday, my son wandered into the room with his nose in the air, taking in deep breathes. “It smells like Jamaica, Mom” was his response, and he wasn’t far off. The warm, creamy, spicy coconut concoction brought back memories of our recent family vacation to the tropics and was hard to resist.


But Coconuts are more than just a fun treat on the beach; they are one of nature’s true superfoods! Referred to as the planet’s most nutritious food, coconuts are a source of fibre and protein. Plus coconut has the ability to fight infections, and protect us from heart disease, not to mention the benefits to our hair and skin!

Coconut Rice Pudding

Rice pudding is delicious served warm or chilled, depending on preference.

Prep Time: 20 minutes         Cook Time: 25 minutes        Serves: 6

 

Ingredients:

3 1/2 cups milk

1 can (400 mL) Grace Organic Coconut Milk

1 vanilla bean, split and scrapped

2 cinnamon sticks

1 star anise (optional)

1/4 tsp ground cardamom

Pinch salt

1 1⁄3 cups basmati rice

2/3 cup Grace Organic Coconut Sugar

1 ripe mango, peeled and diced

1/4 cup Grace Coconut Chips, toasted

 

Directions:

Combine milk, Grace Organic Coconut Milk, vanilla bean seeds, cinnamon stick, star anise and cardamom in a saucepan set over medium heat. Bring to a gentle boil and stir in rice.

boilReduce heat to medium-low. Simmer, stirring frequently, for 30 to 35 minutes or until rice is tender and mixture has thickened. Discard cinnamon stick and star anise.

Remove from heat and stir in the sugar.

Divide evenly among 6 dessert bowls. Cool slightly or chill for at least 4 hours. Garnish with mango and Grace Coconut Chips before serving.

Tip: Substitute 1 tbsp vanilla extract for the vanilla bean. Stir in with Grace Organic Coconut Sugar.

    This recipe looks so delicious! I love that you topped it with fresh mango slices. I’ve seen a few of these items in the grocery store, especially Grace Coconut water. Its very popular. One item by Grace that I constantly have in my home is Grace Coconut Oil. Although I’ve never actually cooked with it, it is awesome for my hair. I just slather it on the ends and leave it for a few hours. It really helps with my split ends. I also use it on my face for added moisture, especially over the cold winter days and if my hands are bothering me-dry skin, I rub it all over my hands before bed and when I wake in the morning they feel a lot better.
