My boys are big fans of gingerbread and these soft and chewy White Chocolate Gingerbread Thumbprint Cookies are a hit with the young and old alike!
It’s only the second week in November and already our holiday calendar is filling up fast! The festive season has a way of doing that doesn’t it? It’s a fun but extremely busy time and to keep the stress away so we can focus on play, I like to try to keep organized and do as much as possible ahead of time. From gift shopping, Christmas card prepping and holiday baking, the earlier I can get it done the better!
White Chocolate Gingerbread Thumbprint Cookies
Ingredients
3 Cups flour
2 tsp ground ginger
1 tsp ground cinnamon
1 tsp baking soda
1/4 tsp ground nutmeg
1/4 tsp salt
3/4 cup unsalted butter, softened
3/4 cup packed brown sugar
1/2 cup molasses
1 egg
1/4 cup granulated sugar
1 tsp vanilla extract
White chocolate chips
Directions
Mix flour, ginger, cinnamon, baking soda, nutmeg and salt in a large bowl.
In a separate bowl, beat butter and brown sugar with an electric mixer on medium speed until light and fluffy. Add Molasses, egg and vanilla, beat well to mix.
Gradually add dry mixture to wet ingredients, beating on low speed until well mixed.
Wrap dough in plastic wrap and refrigerate for 4 hours or overnight is fine.
Preheat oven to 350 F.
Shape dough into 1 inch balls and roll in granulated sugar to lightly coat.
Place balls 2 inches apart on an ungreased baking sheet. I like to use silicon mats when baking so nothing sticks.
Bake 8 to 10 minutes or until the edges of cookies just begin to brown.
Immediately make an indent in the tops of the cookies, I like to use the handle of my wooden spoon for this. I don’t encourage you to actually use your thumb for a thumbprint cookie, because – hot!
You can push a few white chocolate chips directly into the hot cookie, but I find that these don’t melt completely and I like my cookies to look pretty!
Place white chocolate chips in a bowl and microwave for 15-30 second intervals, stirring in between, to melt.
Spoon melted chocolate into the indents in the cookie tops.
Remove to wire racks; cool.
Store in an airtight container, or freeze until Christmas!

you could use candy melts for sure, but they are not quite as tasty as a good white chocolate
