Yesterday was the official first day of summer and boy did it ever feel like summer! With a heat advisory in affect and temps with up to ‘feels like’ 39c we definitely got a taste of the full force of summer. When summer comes on strong, it’s just the perfect excuse to fire up the barbecue (as if we needed an excuse though right?) and grill up dinner. No sense adding more heat to the house with the oven.
Summer is the perfect season to try Canadian turkey on the grill. It’s a light and lean source of protein and just packed with vitamins and essential nutrients, making it a healthy choice for your family. Turkey is so easy to prepare and comes in a variety of cuts, you can pick up ground meat, burgers and sausages at your local grocery store. One of the easiest summer meals is kebobs cooked on the grill, it’s so easy and goes well with a fresh side salad on hot summer days. Check out this amazing recipe for Jerk BBQ Turkey Kebobs with a fresh Mango Salsa!
Jerk BBQ Turkey Kebobs with Mango Salsa
serves 4
prep time: 30 minutes
cook time: 20-30 minutes
Skewers:
4 turkey thighs
1 large sweet potato
1 red pepper
1 yellow pepper
2 tsps salt
2 tsps pepper
2 tbsps olive oil
1 cup of your favorite jerk sauce
4-6 large metal BBQ skewers
Directions:
1. Debone the turkey thighs.
2. Cut into 1.5-2 inch chunks. Note that meat will shrink as it cooks.3. Season with half the salt and pepper.
4. Marinate with jerk sauce for at least 30 minutes, or up to a day ahead.
5. Cut up sweet potato into thin slices, about 1/2 inch. Make sure the slices are thin so they will cook through in allotted time. Alternatively, if you prefer thicker slices or chunks, pre-cook the sweet potatoes in your oven for 15-20 minutes before adding to skewers.
6. Cut peppers into chunks.
7. Mix sweet potatoes and peppers together in a bowl. Season with olive oil, remaining salt and pepper and let marinate for at least 15 minutes and up to a day ahead.
8. Place turkey and vegetables onto skewers alternating between vegetables and meat.
9. BBQ on medium heat for 20-30 minutes until meat is cooked through, turning every 5-7 minutes.
10. Remove from heat and let rest for 10 minutes. Serve immediately.
Mango Salsa
1 large almost ripe but firm mango
1/2 medium red onion
2 tbsps chopped cilantro
1/2 tsp hot pepper
Salt and pepper to taste
1/2 tbsp honey
2 tbsps apple cider vinegar
2 tbsps olive oil
Directions:
1. Dice mango into chunks.
2. Dice red onion.
3. Mix together and add cilantro.
4. Combine last 5 ingredients to make dressing.
5. Dress salsa and serve immediately.

The CHERRY-ORANGE-STUFFED TURKEY BREAST sounds lovely. It’s a little bit involved so I would make this on the weekend when I have more time. But I love the idea of combining cherry and orange flavours together . I will be trying that mango salsa recipe as well.
