This Cheesy Zucchini Rice is a perfect side dish to any meal, it’s quick and easy, plus it has a hidden veggie!
After an overflowing garden bounty of gigantic zucchini’s, I have been baking up a storm with zucchini ever since. From double chocolate zucchini muffins (so much yum!) to a light and tangy lemon zucchini loaf and everything in between, baking with zucchini is a family favourite.
But there’s only so many breads and cakes you can have in the house right? I needed to come up with ways to use up our stash of zucchini that wasn’t a baked sweet.
My first attempt was hiding zucchini in a tasty little biscuit and then I snuck into this ooey gooey cheesy zucchini rice. It was instantly a hit with the family, because, hello cheese! It’s a great way to dress up some boring rice, but it’s still quick and easy using minute rice so you can go ahead and whip this up on a busy weeknight. I keep shredded zucchini in my freezer, so it’s really convenient.
Cheesy Zucchini Rice
Ingredients
- 2 cups chicken broth
- 1 cup white minute rice
- 2 Tbs butter
- 2 cups grated zucchini, chopped fine
- 1 cup shredded sharp cheddar
- salt and pepper, to taste
Directions
In a medium saucepan, add the chicken broth and bring to a boil. Stir in the rice, cover and let stand for 5 minutes or until liquid is absorbed.
While rice is still hot, add the butter, grated zucchini (I like to chop my zucchini really fine), and cheese. Stir until combined and let stand to allow cheese to melt in.
Salt and Pepper to taste.
Serve Immediately.
Can I use regular long grain white rice?
Yes! If you aren’t a fan of the minute rice or just have more time and a favourite white rice, you can absolutely make this cheesy zucchini rice with it. Just start with the broth and cook according to your package directions (likely about about 20 min) then carry on with the cheese and zucchini.

Cheesy zucchini rice goes really well with meat from the barbecue like this pork tenderloin pictured here.

Is 2 cups chicken broth correct? When cooking minute rice it’s equal parts water / rice. Your recipe calls for 1 cup rice.
