Ham and Cheese Potato Casserole

 


With Easter right around the corner, I thought I would share with you one our favourite ways to use up any leftover ham – a Ham and Cheese Potato Casserole! It’s a super cheesy ham and potato bake that is nicely served with a side of veggies or a fresh salad and warm biscuits!

Ham and Cheese Potato Casserole

 

In a large bowl, combine potatoes, ham, 1/2 cup cheese, green onion, and celery.

In a medium bowl, combine sour cream, soups, garlic powder and pepper.

Add wet mixture to potato mixture and mix well.

Transfer to a greased 9×13 (or two 8×8) baking dish. Sprinkle with Italian bread crumbs and remaining cheese.

Bake uncovered, at 350 degrees F for one hour until bubbly and potatoes are tender. Let stand for approx 10 min before serving.

Ingredients

  • 1 package frozen hash brown potatoes (1kg)
  • 2 cups fully cooked ham
  • 1 cup shredded cheddar cheese, divided
  • 2-3 green onion stalks, diced
  • 2-3 celery stalks, diced
  • 1 cup sour cream
  • 1 can condensed cheddar cheese soup, undiluted
  • 1 can condensed cream of chicken soup, undiluted
  • 1/4 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/4 cup italian bread crumbs

Can I Freeze Ham and Cheese Potato Casserole?

 

Yes! I like to make mine in two 8×8 dishes so we can eat one and put the other in the freezer for a quick and easy meal another night.

        I love easy recipes too! Thanks for sharing! I’ve made à similar dish with sliced potatoes , no bread crumbs because I’m gluten intolerant. Casseroles are a staple in my world! Single working mom of 2 active girl, while I went to school for my nursing degree. The second tray for the freezer saves prep time so we have more family time too! Great sharing!

      You could definitely do a brunch with it, possibly even subbing in crushed corn flakes mixed with a touch of melted butter instead of the italian bread crumbs.
