Like a warm hug, homemade Chicken and Chickpea Soup is a hearty and comforting meal. Use rotisserie chicken or left over chicken or turkey if desired.
Soup is my total comfort food. It’s hearty, it’s healthy and there’s a million different kinds so you never get bored. When the first chill of fall hits the air, I start to crave my hot bowls of soup and can’t wait to try new ones all winter long.
This Chicken and Chickpea Soup recipe came about because I was looking for a way to use up a bunch of rotisserie chicken fast, it definitely did the trick and I loved it! It would be equally as awesome with leftover turkey from Thanksgiving or Christmas as well. Great way to use up leftovers without getting bored.
Chicken and Chickpea Soup Recipe
Ingredients
1 medium onion, chopped
1 tbsp garlic, minced
1 tsp ground cumin
1/4 tsp ground cinnamon
1 tbsp lemon juice (or juice of one lemon)
2 medium carrots, peeled and thinly sliced
3 stalks celery, sliced
1 can chickpeas 540 ml
1 can diced tomatoes 540 ml
32oz chicken stock
2 cups cooked chicken, shredded or diced
Salt and Pepper to taste
Instructions
In a large pot or dutch oven, add onion and cook, until soft. Add garlic, cumin, cinnamon and lemon juice, and continue to cook for about 1 min.
Stir in carrots, celery, tomatoes, chickpeas and chicken. Pour stock in and bring to a boil.
Reduce to a medium simmer and allow to cook for about 30 min.
Season with salt and pepper if needed, I prefer to use a flavoured can of diced tomatoes like cracked pepper, so I didn’t bother.

I love chickpeas in soup! I don’t eat much meat so I would make this with veggie broth and leave out the chicken but it looks like a good, easy recipe.
You could definitely do that and I bet it would still taste great!
I can’t say that I’m a fan of chickpeas but I do like a good chicken soup, so I’d probably just put in frozen peas instead.

This looks so yummy!! AND I have this can of chick peas that I wasn’t sure of what to do with so now I have the perfect recipe to put them in. We love home made soups and hubby always brags on my cooking so I am going to surprise him with this one cause I have never used chick peas in anything….sound crazy…guess because when growing up they were just not used in our house for some reason.. Not that I have never ate them because I have. Just in someone else recipe but only in the last 5-6 yrs. Ha Ha I am branching out!!
