I scream, you scream, we all scream for ice cream! When summer temps are sizzling, our favourite cool dessert is ice cream and it’s so fun to make right at home. We’ve made a couple different flavours over the past few summers but we had never tried one with a chocolate base before. Seeing the Nesquik packages in the pantry gave us inspiration to Stir Things Up and try a fun Chocolate Peanut Butter Cup Ice Cream this year, and it turned out amazing!
Chocolate Peanut Butter Cup Ice Cream
Yields: 12-16 servings
Ingredients
2 cups whipping cream
300ml can sweetened condensed milk
1/2 cup chocolate Nesquik powder
1/2 cup peanut butter
3 Tbsp chocolate Nesquik syrup
1 cup mini chocolate peanut butter cups
Directions
Pour sweetened condensed milk into a medium sized bowl and add in the chocolate Nesquik powder, stir until dissolved.
Heat peanut butter in microwave for about 20 seconds until melted. Set aside.
In a large bowl, beat whipping cream until soft peaks form. Fold in condensed milk mixture until combined.
Depending on the size of your peanut butter cups, you might want to cut them in half or even quarters. I bought mine at the bulk barn and they were fairly small but I still sliced about half the cups in half. I found the smaller size a bit lighter, so they didn’t sink to the bottom and more manageable when eating.
Fold 2/3 of the cups into the cream mixture.
Spread 1/3 of the mixture into a loaf pan, drizzle with the melted peanut butter.
Spread another 1/3 of the mixture on top and drizzle with the Nesquik chocolate syrup.
Spread on the remaining 1/3 of the mixture and sprinkle the remaining peanut cups on top.
Cover with foil or plastic wrap and freeze for at least 6 hours, or until firm.
As an added bonus Nesquik syrup is fortified with iron and Nesquik powder is fortified with iron and vitamins A, B, and C. Remember to keep children’s serving sizes to about half a cup.
