This healthy Turkey Meatloaf is loaded with garden veggies! A traditional meatloaf is one of the few foods that every member of my family enjoys, even our picky youngest child (it’s a hamburger without the bun, we tell him!). In an attempt to create a healthy version and use up some of our garden veggies as well, I came up with this turkey meatloaf made with ground turkey and all kinds of vegetables like onions, zucchini, peppers, carrots, plus applesauce and fresh parsley.
Turkey Meatloaf
Ingredients
- 1 lb ground turkey
- 1 small yellow onion, diced
- 1 large zucchini, shredded
- 1 large celery stalk, finely chopped
- 1 large carrot, shredded
- 1 bell pepper, finely chopped
- 1 tbsp minced garlic
- 1/2 cup old fashioned rolled oats
- 1/2 cup bread crumbs
- 1/2 cup unsweetened applesauce
- 1/4 cup tomato sauce
- 1 tbsp worcestershire sauce
- 1/4 cup fresh parsley, finely chopped
- 2 eggs
- 1/2 tsp paprika
- 1 tsp salt
- 1 tsp black pepper
Sauce
- 3 tbsp honey
- 1 cup tomato sauce
- 1 tsp worcestershire sauce
Directions
Heat oven to 350 F.
In a large bowl, add all ingredients (except the sauce ingredients), and mix well until combined.
Press the meat mixture into a loaf pan.
Bake 1 hour
In small bowl, whisk sauce ingredients together. Remove meatloaf from oven, spread mixture over the loaf and return to the oven for an additional 10-15 minutes until thoroughly cooked.
Let stand 5 minutes before serving.

Feel free to use any colour of bell pepper, I used green because that’s what I had on hand but any colour would be great. Also, you could opt to use one full cup of either rolled oats or bread crumbs if you don’t have one or the other.
My picky boy wasn’t too sure about this new kind of meatloaf, but my middle boy couldn’t get enough and gobbled up 4 slices! Turkey meatloaf was a hit with him, especially that sauce!
