Homemade Chocolate Pecan Pumpkin Granola

 


This homemade Pumpkin granola is easy to make, tastes way better than store bought and celebrates the best of fall flavours! With crunchy pecans and the perfect hint of chocolatey sweetness!

Four years ago I made my an amazing Pumpkin Pie with Crumble Topping for Thanksgiving and it’s been our go-to dessert for the holiday ever since. But I’m always wondering what to do with the leftover pumpkin. 

Last year I made this Chocolate Pecan Pumpkin Granola for the first time and I was blown away!

It was soooooo good, with no surprise to anyone, turns out homemade granola tastes a hundred times better than store bought and it was surprisingly easy! This recipe also helped me use up not only the pumpkin but the pecans from the pie as well.

How to Make Pumpkin Granola

 

This recipe could not be easier! All you need to do is combine all your ingredients (minus the chocolate chips) in a large bowl and spread it out onto a baking sheet. It takes about 40 minutes to bake up and then you are all set to sprinkle on the chocolate chips and let it all rest. 

The chocolate chips will get a bit melty which will help them stick to the granola mixture. Now when you break up the granola the chocolate will be incorporated into the granola and not just float around on their own.

Cook Time 50 minutes
Total Time 1 hour

Ingredients

  • 3 cups old fashioned rolled oats
  • 1½ cup raw pecans, chopped or whole
  • ¼ cup canned pumpkin
  • ½ teaspoon vanilla
  • ½ teaspoon pumpkin pie spice
  • ½ cup maple syrup
  • ⅓ cup coconut oil, melted
  • ½ teaspoon sea salt
  • ⅓ cup chocolate chips

Instructions

  1. Preheat oven to 325 F. Prepare baking sheet by lining with parchment paper.
  2. Mix all listed ingredients except the chocolate chips in a large bowl.
  3. Spread the mixture out onto the prepared baking sheet.
  4. Bake in the oven for 40-50 minutes or until oats are golden brown in colour and crisp. Remove from oven.
  5. Sprinkle with the chocolate chips, they will melt a bit as the mixture cools.
  6. Once the granola is completely cool, break up with a spoon and scoop into an airtight container to store. Can be kept for 1-2 weeks.

Pumpkin and chocolate are always a winning combination in my book but add in the maple syrup and pecans and you’ve got yourself an absolutely perfect fall recipe!

 

The Best Ways to Serve Pumpkin Granola

 

  • By the Handful – Snacking on the pumpkin granola by the handful is actually my favourite way to gobble it up! 
  • With Yogurt – It’s perfectly suited to top your favourite flavour of yogurt, add some fruit as well if you like.
  • With Applesauce – I love all these nice Autumn flavours together!
  • With Ice Cream – Granola adds a nice crunch to the top of a scoop of cold vanilla ice cream

How to Store Granola

 

It’s important let your granola cool completely before storing because if it’s even a little bit warm when you seal it up, condensation will form in the container and cause soggy granola. That’s no good, granola is best nice and crunchy!

So once it’s completely cooled off, transfer to an air tight container and store in a cool place for 1-2 weeks (it’s not likely to last that long anyway! You’ll be snacking on it every time you walk by!) It’s fine on the kitchen counter or pantry or you can store it in the fridge if you prefer.
