These sweet and savoury Bacon Wrapped Chicken Tenders will be a hit with the whole family!
It’s May, and May should mean some fairly awesome barbecuing weather. But after about the fifth consecutive day of rain, I finally gave in to the fact that my chicken was not going to be barbecued.
I get it, I get it, it’s Spring and it rains in the springtime, but come on!!! It feels like the dementors have decended on Ontario and brought with them doom and gloom and terrential rain for days and honestly, I felt like I was never going to be happy again. Where’s a patronus when you need one?
By the way, have you ever wondered what your own patronus would be? I took the Discover Your Patronus Quiz on the Pottermore.com site and it said mine was a black and white cat. It struck me as odd consider I don’t even like cats, but I am kind of moody and untrusting so maybe lol
I’ve gotten side tracked by Harry Potter chat, sorry about that, back to the chicken. Most days I would risk the cold wet rain for some barbecue but after being wet and cold multiple times a day for days on end, I wasn’t having it and came up with new plan. The new plan was Bacon Wrapped Chicken Tenders and it’s pure genius and if there was anything good that came out of all this rain, it was this chicken!
Bacon Wrapped Chicken Tenders
Ingredients
2 Tbsp. chili powder
1 tsp. cumin
½ tsp garlic powder
1/4 tsp pepper
1/4 tsp salt
1 cup light brown sugar
1½ pounds boneless chicken breasts, cut into tenders

Directions
Preheat oven to 350ºF.
Generously spray a baking sheet with cooking spray or line with parchment paper and set aside.
In a small bowl, mix together the chili powder, cumin, garlic powder, salt and pepper. Stir to combine.
In another bowl, pour in the brown sugar.
Roll chicken tenders in chili powder mixture.
Next, wrap one slice of bacon around the chicken tender and secure using a toothpick.
Now roll in the brown sugar until well covered.
Place on the prepared baking pan. Bake for about 30 minutes or until cooked through.

These bacon wrapped chicken tenders are little bit sweet and a little bit spicy and a whole lot tasty!
They got rave reviews from the whole family BEFORE they even took one bite! The smell of bacon in the oven had the boys enticed and even they told me how amazing it looked as the pan came out of the oven.
When my husband walked through the door from work, he was beyond impressed and I felt like SuperMom!
With a crew of picky eaters, it’s rare for us to find a recipe everyone in the family will enjoy, and this one was a smash hit! Who needs the barbecue anyway? lol
