Chocolate Milkshake Ice Cream Cake

 


My husband plus all three of our boys have birthdays within 10 days of each other. Between all the parties with friends and family, it tends to be one big cake fest and we end up sampling every flavour during those days.

This year I decided to make my oldest son who was turning 11 (holy cow 11!! How do I have an 11 year old!) an ice cream cake. Ice cream cake is his most requested cake so this year I decided to ‘Stir Things Up’ a bit and combine two of his favourites, chocolate milkshakes and ice cream cake into one – a Chocolate Milkshake Ice cream Cake!

Thanks to Nesquik, this cake turned out amazing and really did taste just like a smooth, creamy chocolate milkshake! 

 

Chocolate Milkshake Ice Cream Cake - Mom vs the Boys

This chocolate milkshake ice cream cake recipe was sponsored by Nestlé. The opinions are completely my own based on my experience.

Chocolate Milkshake Ice Cream Cake

 

Ingredients

1 1/3 cups chocolate baking crumbs
6 Tbsp melted butter
2 cups whipping cream 
1 cup sweetened condensed milk 
1/2 cup chocolate Nesquik powder
2/3 cup chocolate chips, melted

To Decorate
3 Tbsp Nesquik chocolate syrup 
3/4 cup whipping cream
1/3 cup powdered sugar
1/2 cup mini chocolate candies

Instructions

Lightly grease a 9 inch springform pan. Place baking crumbs in a medium sized bowl; pour butter over top and stir to moisten. Press cookie mixture into the bottom of the springform pan to create a smooth even layer. I get the best results using the bottom of the same measuring cup I used to measure out the crumbs. Pop the pan into the freezer while you make the ice cream layer. 

In a large mixing bowl, beat the whipping cream using an electric mixer until stiff peaks form. 

In a separate mixing bowl combine sweetened condensed milk and the chocolate Nesquik powder until blended. Add in melted chocolate chips and stir to combine. 

Fold in the whipped cream until blended. 

Pour the chocolate ice cream mixture on top of the chocolate crumb base layer. Cover with foil or plastic wrap and freeze for 6-8 hours (or overnight, it’s nice to make this part the day before). 

 

To decorate, drizzle cake with Nesquik chocolate syrup. 

Place cream in a large mixing bowl and whip on medium-high speed until fluffy. Add in powdered sugar and whip until stiff peaks form. Transfer to a 16 inch piping bag with a 4B tip and pipe large swirls around the outer edge of the cake. 

Sprinkle with mini chocolate candies. 

Place cake back into freezer until ready to serve.

Birthdays tend to coincide with an overload of sugar but let’s face it, birthdays are a time to celebrate and kids and adults alike are going to indulge a little. Just keep portion sizes small and serve with a healthier drink choice like cold sparkling water.

My birthday boy had a fun birthday party with his friends before heading off to the movies for the evening. It’s hard to believe we have a tween in the house and in just a couple of short years we’ll have a full fledge teenager.
