One Bowl Zucchini Brownies

 


Are you a cake or brownie person? Or both? for me, I much prefer the taste and texture of brownie since they are usually more dense and rich than a cake. With a freezer stocked with shredded zucchini and a couple of recipes I wanted to try that called for brownies, I knew that a nice big batch of these chocolatey One Bowl Zucchini Brownies were a perfect fit.

One Bowl Zucchini Brownies

Ingredients

1/2 cup unsalted butter, softened

1 1/2 cups granulated sugar

4 beaten eggs

2 teaspoons pure vanilla extract

2 cups finely grated zucchini, water squeezed out

1 cup cocoa powder

1 1/2 cups white whole-wheat flour

1/2 teaspoon salt

1 teaspoon baking powder

1/2 cup semi-sweet chocolate chips

Directions

Preheat oven to 350 degrees.

In a large mixing bowl, mix together the sugar and butter until combined. Mix in the eggs until mixture is creamy and blended.

Stir in vanilla and zucchini.

On top of the wet ingredients place the cocoa powder, flour, salt, and baking powder. Stir until all the ingredients are combined and batter is rich and chocolately.

Slowly stir in the chocolate chips.

Pour into a 13-inch baking pan and bake for 25 – 30 minutes or until you can insert a toothpick in it and it comes out clean. Test in a couple of places, if you hit a chocolate chip it will always look wet.

Take out of the oven and let sit for 30 min to 1-hour. Cut into squares.
