A hearty breakfast casserole that is perfect for weekend brunch or made ahead to heat up on busy weekday mornings.
It’s almost time to send the kids back to school and our lazy mornings will soon be a thing of the past. To kick off the year with a great start and keep the family fueled up for a busy day ahead, try this hearty and delicious Tater Tot Breakfast Casserole filled with sausage, bacon, cheese, eggs and of course tater tots! The tater tots make a quick and easy base of sturdy potatoes!
I love a good savoury breakfast and this casserole hits the spot! It’s perfect for weekend brunches and you can just freeze the leftover portions for breakfast later in the week or if you are really prepared whip this up on a Sunday and just warm up and serve to the family for breakfast on Monday and Tuesday mornings. What a great way to start the week!
Tater Tot Breakfast Casserole
Ingredients
- 1 32 oz bag frozen tater tots
- 1 lb pork sausage
- 1 large onion diced
- 1/2 lb bacon
- 3 cups shredded cheddar cheese – divided
- 1/2 cup milk
- 1/4 cup green onions
- 8 eggs
- 1/2 tsp salt
- 1/4 tsp pepper
- Green onions diced
Directions
Preheat oven to 350.
Spray a 9″x 13″ baking dish with non-stick cooking spray.
Arrange Tater Tots in a single layer in the prepared baking dish.
In a large skillet cook sausage and onion until sausage is cooked through and onions are tender. Remove to a paper towel lined plate and drain skillet of fat.
In same skillet fry bacon until brown and crispy. Drain on a paper towel lined plate. Crumble.
Whisk together eggs, milk, 1/4 cup green onions, salt, and pepper in a med sized bowl. Stir in cooked sausage with onion and half the cooked bacon.
Fold in 2 cups cheddar cheese into egg mixture.
Pour egg mixture over tater tots.
Bake in preheated oven for 40-45 minutes or until egg mixture is set.
Sprinkle top evenly with remaining 1 cheddar cup cheese, pop back in the oven, about 5-7 minutes until the cheese is melted.
Allow to stand 10 minutes. Sprinkle with remaining half crumbled bacon and additional green onions and serve.

Breakfast for Dinner
While the name does suggest that this casserole is to be served at breakfast, don’t let that stop you from enjoying breakfast casserole for dinner! It’s a nice hearty meal that is comforting especially on fall and winter nights.

Can You Freeze This Tater Tot Breakfast Casserole?
For sure! The best part about breakfast casseroles is they freeze really well! So you can make this casserole ahead of time (prepare and bake the casserole) then freeze the whole casserole or just the left over portions.
If you are prepping for busy school/work mornings, divide the casserole into individual servings and place in a freezer safe container. Then all you have to do is take them out, heat in the microwave and you have a quick, easy breakfast before everyone dashes out the door or you can bring one along to work to have for lunch!
