Thai Red Curry Chicken with Rice Noodles

We are over mid way into January, how are your resolutions coming along? If you made a resolution this year to cook more homemade meals or eat healthier, stir frying can help you stay on track with authenic tasting meals that won’t bore your taste buds! Last night, my husband and I made the most deliciously spicey Thai Red Curry stir fry that was anything but dull and was better than take out! gasp! I meant it too, sooooo good! Give it a try!

Ingredients

Instructions

  1. Heat the oil in the wok or frying pan and cook chicken through. Remove chicken from pan.
  2. Add the celery, red onions, and  pepper. Stir fry for 3 minutes.
  3. Add a couple of tablespoons of water. Continue to cook the vegetables until tender but retain bite.
  4. Push the vegetables up the sides of the wok. Add another couple of tablespoons of water to the centre and mix in the curry paste and fry until it has mixed with the juices at the bottom of the pan and reduced to a syrupy consistency.
  5. Add the coconut milk, sugar and fish sauce and mix in the vegetables.
  6. Add the noodles and chicken. Toss together until sauce is warmed through. Serve with a squeeze of lemon and garnish with green onion

  • 1 red or green peppers, cut into strips
  • ¼ jar Blue Dragon Thai Red Curry Paste
  • 1 can Blue Dragon Coconut Milk
  • 1 tbsp sugar (try coconut sugar!)
  • 1 tbsp Blue Dragon Fish Sauce
  • 4 portions rice noodles, cooked per directions on package
  • 1 squeeze of lemon
  • 2 green onions, chopped

      oh no, that is terrible! I wish my husband loved mint like me lol

      • He doesn’t eat chicken or pasta either which makes it so hard, of course I love them all so whenever we go out I have chicken with either pasta or rice
