Chocolate Banana Muffins

If you are a regular visitor to Mom vs the Boys, you already know my love for baking! It’s been one of my favourite activities to do with the boys since they were babies, and sometimes I sneak it in while they are at school for a little ‘me time’! Baking just got a whole lot better with the arrival of this stylish new products from Trudeau

Trudeau is bringing sexy back to baking!

Pretty to display, a joy to use and hit on all your foodie social shares, it’s easy to fall in love with the fun and functional pieces that make up this bakeware collection. I love how all the different elements are perfectly colour co ordintated in shades of steel grey, fushia, mint and coral! But Trudeau is more than just a pretty face, the new Structure line of baking pans feature an exclusive reinforced steel rim for secure handling while still having the non stick and flexible properties that make silicone so appealing! 

silicone muffin panI tried out the line for the first time last weekend, making these delicious Chocolate Banana Muffins

2 cups all purpose flour
1 cup whole wheat flour
½ tsp salt
1½ tsp baking powder
1½ tsp baking soda
2 cups sugar
½ cup unsalted butter
2 eggs
1 cup buttermilk (or 1 cup milk with 1 tbs lemon juice)
4 – 5 very ripe bananas, mashed
1 1/4 cup chocolate chips, divided

Directions:

Preheat your oven to 350 degrees and prep your muffin tins with liners or spray. Because I was using the silicone pan from Trudeau, I decided not to use liners so I could see how easy they would come out. I did grease the pan though.

Trudeau makes a fun flour sifter that works like a charm, sift flours, baking powder and baking soda. Set aside. ( you can use 3 cups of all purpose flour if you don’t have any whole wheat on hand)

In a separate bowl, cream sugar and butter. Trudeau makes baking fun with these adorable spatulas! Mix in eggs one at a time, then add the mashed bananas.

spatula mintIn a microwave safe bowl, melt 1 cup of the chocolate chips in 20 second burts, using the microwave. Stir frequently, until melted through. Don’t over cook.

yum spatulachocolate pmAdd dry ingredients and buttermilk, to egg mixture, alternating until mix thoroughly. Don’t over mix. Stir in melted chocolate.

Fill each muffin tin 3/4 full, sprinkle with remaining chocolate chips. 

Bake for about 20 minutes or until a toothpick comes out clean. This recipe makes 48 muffins, which is perfect for our family of 5!

    I love to bake zucchini loaves and then I freeze them. I kinda overdid it the first time as I had a lot of zucchini and had to times the recipe quite a bit. Ended up I had to get the camping cooler out to be able to stir it all up. Being a working mom you don’t get a lot of time to bake so I would bake extra and freeze it.
